I tried to make Choux paste with an old recipe of mine - it worked the first few times and then failed dismally the next few!

In choux paste making , the recipe is simple and supposed to be fool proof Its in the procedure that most people have difficulty as they don't exercise care .

Why dont you give me the recipe of choux paste so I can tell you what you doing wrong. Maybe you putting too much of something or too little of something!
I make this all the time and have never had a problem
1 cup water 4 oz (1 cube) unsalted butter 1 tsp salt Bring to a boil- add all at once 1 cup A.P. flour Stir and cook for about 10-15 sec Should be a semi dry blob.
