I notice some recipes (but not all) require the dough to rest (for 20 mins) after the first rise. But won't this interrupt the final rise or overstretch the gluten strands?

I notice some recipes (but not all) require the dough to rest (for 20 mins) after the first rise. But won't this interrupt the final rise or overstretch the gluten strands?
I don't have any idea about final rise.. I prepare it as final touch... Just leave it for 1/2 hour after mixing with Yeast and then make complete dough and leave it for approximate 2 hours..

Yes thanks, I think I'll drop the 20 minutes final rise/resting phase.
Even oven temperatures are very important in dealing with yeast products.
