carrot cake in a bread machine?

Hi,

I´ve recently bought myself a bread machine and now wonder how i ever managed without one for so many years :-)

I just wondered, is it possible to make a carrot cake in one? If so, does anyone know a recipe for one? Actually, do i need a special one for the bread machine or can i just use a normal recipe?

It's possible, but there's no reason to. Bread machines are handy in that they do the kneading, proofing, and futher kneading (so comment on how well). Carrot cake is simply briefly mixed then baked--no knead or rise. You won't really save any effort, and the finished product will not likely be as good (it would probably overmix, and make it chewy).

Actually-if your machine has a "quick bread" cycle (not the rapid or turbo cycles that some have for yeast breads) it is possible. All this cycle does is stir the ingredients and then bakes it -some machines have a cake cycle but I'm not sure if it is the same.

Beth Hensperger's book "The Bread Lover's Bread Machine Cookbook ", has a recipe for "Carrot Bread" that uses either quick bread or cake cycle (depending upon which your machine offers).

Many recipes from this book are online, so try googling using select keywords. If all else fails I might be persuaded to post it; but many don't like it.

Quick bread or cake cycles do just what the other poster said, mix ingredients and then switches to bake without any rise time. These cycles are not to be confused with "Quick Yeast Bread" cycles on some bread making machines. That cycle is designed for bread recipes that use fast acting yeast and it skips one rise cycle.
