I'm diggng a hole in the yard - banana bread RIP!

Last week sometime I had a bunch of bananas "clock out" aka go brown before I could eat em. I'm usually like "big woops" I can make banana bread - yummy. But this time I was kind of short on time so I skin em and put em in the frig.

Baked up some bread tonight - the nanners smelled okay not great but hey nothing ventured eh - well the verdict is nope, I'm not eating it. It is not outright bad - it just doesn't taste right.

Tomorrow I shall dig a modest hole in the yard and give the loaves a proper burial. Compost eh.

Mash 'em up when they are that ripe, and freeze them. We usually freeze them in a 1 loaf quantity in a ziploc baggie, and when the urge to bake hits, pull it out an hour or so before use.

I just put them in a bag and freeze them with skin on. When I'm ready to use them, I run them under cold water and peel them.

reading this thred made me wonder if you have tried and really good and moist banana bread/muffin recipes? (preferably without nuts) i have tried so many from here or other sites but couldn't find one that we really like. we are often give lots of banana and i'd like to use them in baking instead of just eating them. thanks a lot

Here is the best banana bread recipe I've ever tried. I made it 4-25-04. Another thing I like about it is that it uses 2 cups of bananas instead of the paltry small amount used in most banana bread recipes. It is from Master Cook, but I have added my two-bits worth. I didn't use the butterscotch morsels, but substituted chocolate chips. I put ALL the nuts inside the bread instead of saving some for the top, as it didn't indicate how much to save for the top. I toasted the walnuts before I added them. I used 1 cup sugar instead of 1-1/2 cup sugar. I was worried about the amount of nutmeg that it called for, but the amount called for is just fine. I used

2 pans, buttered and very lightly floured and sprinkled cocoa on the bottom of the pan before adding the ingredients. I baked in my oven for 60 minutes.

Butterscotch BANANA BREAD (Chocolate Banana Bread)

I used the KitchenAid Mixer

3 1/2 cups flour 1 1/2 cups sugar (I used 1 cup sugar) 4 tsp baking powder 2 eggs 1 teaspoon baking soda 1/2 cup butter -- melted 1 tsp cinnamon 1/2 cup milk 1 tsp nutmeg 2 2/3 cups chopped nuts 1 tsp salt 12 oz butterscotch chips (I used B&J chocolate morsels) 2 cups mashed bananas (I used VERY ripe bananas)

Preheat oven to 350. Mix all DRY ingredients EXCEPT THE SUGAR and set

aside. Cream together butter and sugar until creamy. Add eggs and bananas.

Gradually add flour mixture alternating with milk. Mix until well blended.

Stir in butterscotch morsels and the chopped nuts. Pour into 2 greased and

floured loaf pans. Sprinkle remaining nuts on top.

(I used all 2-2/3 cups of English Walnuts chopped)Bake 60-70 minutes. (I baked 60 minutes until done)

(If

you'd prefer making 4 small loaves, bake 50 min. at 350. Cool 14 min. and

remove from pans or morsels will stick.

hi dee,

thanks for the recipe. i am so happy to see one recipe that's telling me the exact amount of banana (instead of how many medium or large ones!) i am wondering, with that amount of nuts in the bread, is it possible for me to omit it all as my family don't eat nuts and esp. i have a small baby who likes banana bread and i don't want him to eat nuts just yet. thanks. i have lots of banana (really ripen) on the kitchen counter now and will like to make this ASAP.

also, is soft brown sugar ok?

Dear Jojoba, My advice is to make this recipe for yourself and treat your baby to a nice mashed up banana with no sugar, no chocolate, nor butter. I don't know the answer to the nut question. Nuts are wonderful and healthy! But if you don't like them, this is not the recipe for you. This is chalked full of nuts, nuts, nuts! Best of luck, Dee

lol. thanks. my baby eats almost everything and anything (even hot and spicy food.) however, when it comes to bananas and papayas, he is rather picky. it's up to his mood. want to make a banana cake simply because we have way too many (always given by a friend who grows them.) and i think my baby may want to try some of the cake if i do bake them. not only we don't like nuts but i also worry abotu allergies and they are being too hard for a baby. but anyway, i keep this recipe for reference since you don't think it's a good idea to take away the nuts. thanks a lot.
