Looking for recipe for Macapuno Esaymada

I am searching for a recipe for a Filipino bun or muffin called Macapuno Ensaymada. I've found several places to buy the muffins, however I'd like to try baking them.

Ensaimada is not traditionally made with macapuno but is more likely topped with a butter and sugar mixture, or edam (or some similar) cheese. Because of that, it may be difficult to find a recipe for macapuno ensaimada. Does the macapuno seem to be incorporated into the dough, or is it more of a garnish or a filling? Here's a recipe from parents-talk.com that you can play with. Macapuno can be found in Filipino grocery stores (or Chinese or Vietnamese ones, depending on the area in which you live) in jars. It comes in a syrup, so you'd probably have to pat the macapuno dry so the dough doesn't become too wet. A distant relative used to make the absolute best ensaimada I've ever had but alas, she died a number of years ago and as far as I know, she did not pass her recipes to anyone (she also made very very good pandesal).

Ensaimada From Rubylyn (Philippines)

Ingredients:

6 egg yolks 3/4 cup white sugar 1 pkg dry yeast 1 cup milk 1 cup water 1/2 lb. butter 4-5 cups all purpose flour

Directions: In a mixing bowl, place the dry yeast, sugar, 1 cup flour and lukewarm milk and water. Set aside until the mixture starts to rise about 45 minutes.Separate the egg whites, beat the egg yolks into the mixture, blending very well. Add the flour little by little. If using a mixer, mixture should leave the sides of the bowl. Add the melted butter and set aside until it has doubled in bulk, about 1 hour.

Dust the board where the dough will be rolled out with a little flour to prevent dough from sticking. Divide dough into equal portions (12). Roll out each portion, brush with butter and roll into a long strip. Form into a coil, insert the inner end making sure it's tucked in, same with the other end of the roll. Butter top. Let rolls rise until they have doubled in size, bake at 375 degrees f.about 12-15 minutes. Brush with butter, sprinkle with sugar, and individually wrap each roll in waxed paper.

Prep Time: 1 1/2 hour

Cooking Time: 15 minutes.

Thank you for responding to my request for the recipe. I'll try the ones you posted, and look for the Macapuno preserves in a Filapino market. I never thought to find a recipe for a general purpose sweet bun. This idea makes a lot of sense.
