Need bagel recipe

Hi!

Does anyone have a recipe for making bagels??? And if I want to make cinnamon bagels how much cinnomon would I use for that recipe?

This is a copy cat recipe. The cinnamon flavor comes from the topping.

Auntie Anne's Pretzels

1 1/2 cups warm water 1 1/8 tsp. active dry yeast 2 Tbs. brown sugar 1 1/8 tsp. salt 1 cup bread flour 3 cups all-purpose flour (I use 4 cups bread flour) 2 cups warm water 2 Tbs. baking soda 4 Tbs. butter, melted 1/2 cup sugar mixed with 1 tsp. cinnamon or coarse salt or garlic butter

Sprinkle yeast in warm water in mixing bowl. Stir to dissolve. Add sugar and stir to dissolve. Add flour and salt and knead dough until smooth and elastic. Let rise at least 1/2 hour until doubled in size. While dough is rising, heat 2 cups water and 2 Tbs. baking soda; stir often.

After dough has risen, divide it into 12 balls. Roll each ball into a rope about 1/2" or less thick and shape. Using a skimmer, dip pretzel into soda solution and place on greased baking sheet. Bake in preheated

450=B0F oven for about 10 minutes or until golden. Brush with melted butter and sprinkle on desired topping(s).

Oops, I left off the last paragraph: These could be shaped like bagels. To get the tougher surface normally found on bagels leave the formed bagels in the simmering soda water for a longer period of time--30 seconds to as long as 2 minutes before removing to the baking sheet.
