These are from a fellow Weight-Watcher; I haven't tried any of them.
Combine 1 cake mix (any flavor), 1 can diet soda (any flavor), and 1 egg white. Mix and bake. Cut into 16 pieces, 2 pt. each. Try chocolate cake & cherry coke, lemon cake & Fresca, etc. I haven't tried it, but have been told it's good.
*******************************Pumpkin cake or muffins: 1 box cake mix (any flavor - spice, carrot, or banana are good), 1 small can pumpkin (not pumpkin pie filling), 1/2 cup water. Mix & bake. Cut into 16 pieces, 2 pt. each
*******************************1 angel food cake mix, 1 can Splenda pie filling. Mix dry cake mix and pie filling. Bake as directed on the cake mix box.
******************************Better Than S** Cake (serves 24, 3 pt. per piece)
1 box Devils Food Cake 10 oz. diet Coke 1 egg white 6 oz. fat free caramel topping 7 oz. fat free condensed milk 1 cup Heath Bar bits 1 container fat free Cool Whip Mix, cake, coke, and egg white. Bake in 9"x13" pan. Heat caramel and condensed milk until smooth. Poke holes in cake, then pour over top. Sprinkle with Heath Bar Bits (reserve some for topping). Cool completely. Cover with Cool Whip and garnish with left over Heath Bits.**********************
Cool Refrigerator Cake with frosting (serves 12, 4 points per slice)
1 pkg. white cake mix 1 pkg. fat free sugar free pudding mix 3 egg whites 1 tsp vanilla 8 oz. fat free vanilla yogurt 1 can diet 7-upMix all ingredients for 2 minutes, adding in the 7-up last before mixing. Bake at 350 degrees 30-35 minutes. Cool
Frosting
1 pkg. sugar free fat free pudding mix 1-1/2 cups cold skim milk 2 cups fat free Cool WhipMix pudding and milk, fold in cool whip. Frost cake. Serve cold. Store in refrigerator. Can also be made using flavored pudding and yogurt.

Those sound yummy Julia. Do you know if you can replace the egg white with liquid egg?

I assume you mean something like Egg Beater. I don't see why that wouldn't work, because Egg Beater is mainly just egg white.
