OT Apple Uside Down Gingerbread

Everybody loves this. The only tricky bit is getting the heat set right for the apples in the first part.

Apple Upside Down Gingerbread

about 4 big tart apples

3/4 cup of brown sugar mixed with 1 teaspoon cinnamon 2-3 tablespoons of butter (not shortening)

1 cup sifted flour

1/2 teaspoon baking powder 1/2 teaspoon baking soda biggish pinch of salt 1/2 teaspoon cinnamon 1 teaspoon ginger 1/4 cup butter or shortening 1/4 cup brown sugar 1/2 cup sour milk 1/2 cup molasses 1 beaten egg

Peel and slice apples. Spread an 8x8 inch pan with 2-3 tablespoons of butter. spread half the apples in the pan and sprinkle with half the cinnamon sugar, repeat with the other half of the apples and sugar. Set the pan of apples to cook over low heat. Just leave it while you make the batter.

Cream the butter and sugar. Mix the molasses and milk. Sift the dry ingredients together 2-3 times. Beat the egg into the butter and sugar. Alternately add wet and dry to egg and butter mix, beating well. Pour over apples and bake at 350F for 45 minutes or until done.

While still warm turn out apple side up.

This is easily done in a cast iron skillet, which is better for even heating on a stove burner than a baking pan.

Could you put the pan of apples in the preheated oven while you make the batter? It sounds super yummy!

That sounds so yummy! I LOVE gingerbread. My husband didn't like it so I never made it. No, that it's just me, I can make gingerbread if I want!

I have a glass top stove so cast iron won't work. But, as Leslie asked I can't see why sticking the apples in the open wouldn't work.

I just bought a new keyboard. The keys aren't shaped the same as on my old keyboard and I'm having a terrible time with it!
