OT best summertime crock recipe

Anyone have a good summertime crock recipe? Most of my recipes are more winter stuff. TIA, Taria

My daughter told me about some new packages of crock pot seasonings. She first used the pulled pork, for sandwiches like sloppy Joes, I had trouble finding them here in Fl, but did try the pork, and we enjoyed it. Theere are a couple of frozen bags of all you need for chicken and dumplings, and stew. I think there is a pot roast package too. Soup and salads or sandwiches are summer good. KayFl.

Would BBQ type crock pot recipes work? I have a few of those upstairs that I can grab ...

I used to do CP all the time, but now I just Rachael Ray it (NAYY) ... the stuff she makes that's low carb (for hubby, not me - I loves my chocolate!) actually tastes good to those who love carbs! Usually they only have 10 ingredients (usually veggies or regular pantry type items) and only take 30 minutes from chopping to table!

Even the recipes that have the freaky "upscale/trendy" names taste good! Who'da thunk that fish tacos could be a GOOD thing? :)

I have all her books ... so if you have a hankering for a specific meat/dish, I can pull'em out and give'em to you! :)

Not at all a CP recipe but I see a very interesting idea in July 07's Southern Living. It is Catfish Beignets. Just imagine that. Beignet is usually a New Orleans sweet fried light pastry that will shower you with powdered sugar. The only ingredient that I don't have is 1½ pounds of catfish fillets. We won't even have to go fishing to try it now that farming catfish has replaced the cotton crop - ought to be easily available in the frozen food section. Polly

You're quite right, Taria. It's probably been months since I fried anything. However, Alton Brown assures us that if we use the right oil and fry only a few pieces at a time thereby maintaining a temp of 360° to 375° that the food will not absorb much oil. The catfish beignets flavor might be jazzed up with a cup of bacon grease and a pound or so of butter but we will leave that to Paula Dean. Polly

Do remember that you can bake a ham in your crock pot. That's good for ham and an honest-to-goodness real tomato sandwich, ham salad, shredded ham with barbeque sauce . . . just lots of cool summer dishes. You would need an hour on High and then 8 or so on the low setting and would be limited by the size of the crock pot. Polly

Oh, I don't know, Polly. I trust your judgment implicitly, but Catfish? In a beignet? Wouldn't it just be better to fry the catfish with a cornmeal coating as usual and have the beignets with a cup of good strong coffee afterward?

Alrighty ... I'll dig a few of my favorites (kept ME married and that means a LOT) and post'em.

I've also got a modified-for-CP Cubanos recipe that's REALLY tasty and easy (though it IS a bit of work - but well worth it) ... it involves quite a bit of zesting (an orange & 2 limes), but like I said, it's well worth it ... after the meat cooks all day, she can either slice it really thin or just grab two forks and shred the heck out of it .... then slap it on bread, top with swiss cheese and some deli ham and it's an impressive seems-like-you-worked-for-hours-but-didn't Cuban Fiesta!

Sound intriguing? :)

1 chicken cut up--put into pot 1 bottle of your favorite BBQ sauce--poured over the top of chicken

Put on high for an hour, then let cook on low until meat nearly falls off the drumstick (about 6 hours).
