OT: Looking for Crock Pot Ideas....

I have 3-4 tried & true recipes for soups / meals in the crock pot. (sad ... been cooking for 30+ years and only 3-4 really regular ones!)

I'm looking for ideas (and I bet some of the others on this group would love them too!) that let me put dinner on first thing in the morning... forget it and have dinner ready by 6:00 PM. Then I have all day to clean, shop, sleep or if I feel up to it... maybe even Quilt!!! I don't do spicy (my system attacks me with anything the least bit spicy)...

So what is your family's favorite crock pot meal? Please share your recipe here.

I'll start with 2 of my regulars:

1) Pork roast & sauerkraut -- put 'em in and turn it on! that's it!

2) Simple chili -- brown 1 lb of hamburger. Add it to the crock pot with the following: 1 Large can of Tomato Sauce; 2 cans of kidney beans, and 2 cans of stewed tomatoes (original style). and cook all day. Serve with shredded cheddar cheese... by itself or over spaghetti to stretch it if you have a crowd! I keep the chili powder on the table -- and let each one add the "heat" they like!

Now -- help me with your quick and easy "go-to" crock pot recipe. (My arm/neck is still bothering me WAY WAY too much. I'm still on pain meds... and just don't feel like cooking... or even thinking for that matter! Tonight -- we raided the pantry to try to come up with a meal. I need to shop tomorrow...

Hi Kate, Do you like chicken? Try this........... it's really good, and you can use frozen chicken breasts. At dinner time, you can either shred the chicken and put on crusty, toasted rolls for bbq chicken sandwiches, or have the breasts whole, along with a baked potato or something. It lends itself nicely to a lot of different things.....

6 frozen skinless, boneless chicken breast halves 1 (12 ounce) bottle barbeque sauce 1/2 cup Italian salad dressing 1/4 cup brown sugar 2 tablespoons Worcestershire sauce 1/2 cup diced onion 3 to cloves garlic, minced

throw in slow cooker and cook on high for 6 hours, or low for 8 or 9 hours..... enjoy

3-4 lb. chuck roast

peeled and cut up: carrots, potatoes, celery into one inch cubes, peices

peeled and chopped onion (roughly chopped)

clove garlic, chopped

1 can whole peeled tomatoes, drained and squeezed of seeds.

salt and pepper to taste

water enough to cover all.

set and cook all day....

before serving, drain the water into a pan and make gravy, cut up the meat, pour gravy over all to serve.

Just had this this week. Easy and great for leftovers as well.

4 chicken breasts 2 cans stewed tomatoes 1 can quartered artichoke hearts with juice 15 to 20 pitted Kalamata Olives 1 box instant couscous Feta Cheese

Lightly spray slow cooker. Place chicken in bottom. Pour in tomatoes, artichokes and olives. Stir. Cook on medium for six hours or Low for eight.

When done, prepare couscous. Place serving of couscous in bowl, chicken brest on top with sauce mix, sprinkle with Feta cheese.

Serves 4

Very flavorful.

My personal favorite crockpot recipe is one that can actually make a few meals, depending on appetites and numbers.

Italian Style Pot Roast One large, boneless beef roast (Chuck is good. and yes I have done this with bone in, but then you have to be sure to find the bones. ) Potatoes, carrots, onions, and whatever other vegetables you want to add. Bottle of Italian style seasoning herbs/spices.

Clean and cut up vegies. Put in bottom of crockpot. Put roast on top. Add at least 2-3 table spoons (yes the whole small jar) of seasoning. Cover and cook until done. Do not add liquid. There will be plenty. Time depends on how much you put in and the size of your crockpot. Difficult to "overcook" except the vegies may disintegrate too much. ) Make some gravy with juices if you wish. Or use canned gravy or from a quick mix. (Easy anyway.) First meal: pot roast. Second meal: shredded beef sandwiches. Put on "hard" rolls or such. Nice and juicy. Third meal: make leftovers into stew.

Great meal and it is best made with "cheap" cuts of beef, so not too expensive. For a crowd, leave out the vegies, just beef and seasoning. Will cook into a really juicy, easy to shred roast that makes a lot of sandwiches. (If not using the vegies, you might still want to add an onion or a package of onion soup mix for a bit more flavor.) One of the ladies in a quilt group I go to used to bring this for pot luck lunches.

Best Roast Ever

Any kind of roast, beef or pork, the cheaper the better. Throw it in the crockpot. Mix the following dry mixes together:

Brown Gravy mix Good Seasons Italian Dressing mix Hidden Valley Ranch dressing mix.

Sprinkle over the top of the roast. Pour a cup of water over it and turn it on. That's it. I've put this on at 10 at night and had it for lunch the next day. Make gravy with the liquid.

The only problem is that every time you wake up you can smell it and it makes you drool.

I don't do olives... will it work without them. I love artichoke hearts tho! and DH loves FETA! could be a winner if we can skip the olives!

I've talked with him.... this is what he expected I guess (but now exactly what he told me to expect! I guess he gave me BEST possible outcome -- not all possible outcomes... this is the middle of the road outcome)

Pain before... without meds was 8-9 (10 is pull the covers over and pray for the angel of death!!) It was BAD!! Pain before... with meds -- 3-4 (hurt and still not feeling like doing much -- but could do bare minimum. Just no initiative to go above necessary tasks.)

Now -- post procedure.... Pain is down... not nearly as bad ... without meds in the 5-6 range (which to me is it hurts enough to look for meds... and can push through tasks... but again -- initiative is minimal. Pain still there most of the time with meds... 2-3 range -- nuisance... you know it's there and can get things done.... you start out tackling a project ... but halfway through it -- the meds start to wear off and you wonder why in the devil did you take this on!!! I do now have lots of tingling in my arm -- that funny-bone sensation up and down my entire arm. Again not pain -- but not normal.

Occassionally ... and I mean VERY occassionally.... I suddenly realize -- nothing hurts! I want to do a Major HAPPY DANCE. But it lasts only a short while (minutes -- not hours).

The procedure was relatively painless (except the initial shot for the epidural -- which merely numbed me for the procedure itself... which was a series of injections into my upper back / lower neck to inject steroid material around the problematic disk. I felt 11 injections (you could feel it -- just no pain).

Doc says to continue with meds (he didn't anticiapte I'd have no need for meds). And that the steroid impact should continue for the next week or so. We'll see. I'm supposed to talk with him the 22nd. I emailed him last week when my 5-7 days was up and I wasn't experiencing the relief I had anticipated.

I suppose that you could leave the olives out. I think that they might give some of the sweetness to the whole mixture, and besides, in spooning it out you could avoid most if not all of them. What is surprising is the full taste of it all with no extra added seasonings. I'm sure that Bert would agree with you. It's great having supper done at 10 a.m.

Hope things only improve on the pain front. Happy thoughts and wishes on their way.

One I like, if I can find a chicken the right size is to "roast" a whole chicken. I usually do it without veg, because it's much less liquidy than doing a beef pot roast. However I will shove in some very bizarre things, particularly if my MIL winds me up. Once I coated it in strawberry jam and stuck bananas around it later in the day - it actually turned out really really yummy.

You only need to put enough liquid in to cover very thinly the bottom of it, then switch it on, no need for browning or anything like that. When you get it out, the meat will literally fall off. Some people suggest putting the chicken in upside down.

Here's my favorite crock pot recipe: (think sauerbraten). It's a Weight Watcher Recipe - we absolutely love it!

German Stew

1 1/4 lb beef for stew, cut into 1" cubes 1 T, +1 t oil 6 - 8 carrots, sliced into 1/2" pieces 1 c chopped onion 2 garlic cloves, minced 2 small apples, chopped into 1/2" cubes 1 1/2 c water 1/2 c dry red table wine 2 cubes (or 2 t) beef bouillon 1 bay leaf 1 t thyme leaves 1 t salt 1 t pepper

Brown meat slightly on top of the stove, then, sauté all the veggies for about 5 minutes, before they go into the crock pot.

Throw everything into the crock pot & cook for about 5 hours. Remove bay leaf before serving.

The actual recipe calls for 1 carrot, grated, but we really like vegetables, so I throw lots in & just slice the carrots. I think they would turn to mush if I grated them.

Crock Pot Liners! I have one of the crock pots that does not have a lift out ceramic pot. Thankfully you can now get plastic bags to line the pot to make clean up easier. When I bought mine, there were 4 in a box. I'm thinking the box was close to $2.50. Barbara in FL

Those are especially nice when you do something like crock pot mashed potatoes. Otherwise, you end up with a really messy crock pot. Crock pot mashed potatoes are great when you are fixing a big dinner for a crowd because you can do them in advance. I cooked the potatoes with some garlic, drained them, and mashed them with some light sour cream & chives. Put in crock pot to keep warm. Google "crock pot mashed potatoes" for more recipes.

thanks for that update, Kate. i was worry'd and wondering how you were getting on post procedure. if it has improved that is good. i guess it is just gonna be slow to improve but something is better than nothing. continue to do things slowly when/as you feel up to it. hopefully in time those 'minutes' will turn into 'hours', then days, then weeks, then months.

i recall well the numbness in my leg after first delivery and being up in stirrups for hours with a fetal monitor on babys head. when i asked what it was, dr says must be a pinched nerve from being stuck in one position for so long. i was also out with an epidural so at the time i felt nothing. asked how long this takes to right itself....half an inch a month. omg!!! that is from my foot to my spine? at the time felt like it'd be the rest of my life. eventually it did right itself but took a few yrs to completely come right. i'm still dealing with the injury to my collarbone back in july 01, nothing big just the occasional niggle but annoy'n when it happens. nothing much i can do about that. also being older things take even longer to come right. oh well for me. nothing that is a major problem comes right in a short time. tis a real b*tch waiting for that day tho. hugz, j.
