OT: Looking for Italian cake recipe

I know its not a cake but that's the only thing I can call it. This cake/torte has lots of eggs and instead of flour, finely ground nuts are used. It contains chocolate in the recipe. No icing just dusted with powered sugar.

I lost the recipe many years ago and would like to try and make it again. Anyone here know what I'm talking about. I've tried searching google but without a name I can't find what I am looking for.

It is very possible that plain old Domino Confectioner's 10-X powdered sugar would substitute just fine for the 'powdered evaporated cane juice'. The post-Katrina Mississippi coast is not exactly the gourmet food shop capital of the world. And Kate, I'll bet that you can powder almonds in a plain old blender. Not sure but it ought to work. Are you inviting us over? I'll bring the whipped cream. All we need now is Paula Dean to bring some Georgia peaches. Polly

Yep that looks like it, BUT without the brandy. There was a monk or brother that had a cooking show on several years ago, that's where I got the recipe. The cake/torte doesn't rise like one made with flour. Its more like brownies. I love it.

And yes Polly you can bring the whipped cream as long as it is real whipped cream not the stuff made with oil.

As soon as I can grind up some almonds or pecans I'm going to whip this little treat up for a snack after quilting. I got a grinder for Christmas and want to try it out.

I grind up all sorts of nuts very successfully with a small Krupps elecrtic coffee grinder! It makes small amounts but works very quickly on nuts, spices, and coffee beans.

The program you watched was called 'Breaking Bread with Father Dominic' with Father Dominic Garramone on PBS. I never missed it and was really disappointed when it went off the air. I just so happen to have his cookbook with that torte recipe. It's called Serbian Torte which sorta sounds like Italian Tort ;)

Serbian Torte

Ingredients

10 large eggs, separated 1 3/4 cup Sugar (divided use) 1/4 cup zwieback crumbs or dry bread crumbs 1 tsp grated lemon rind 1/4 cup lemon juice 1/2 lb blanched almonds, very finely ground 3 oz unsweetened chocolate, melted 1/2 lb soft butter 1/4 cup sliced toasted almonds

Directions Preheat the oven to 350 degrees F. Beat the egg whites until stiff and gradually beat in one cup of the Sugar. Fold in the crumbs, lemon rind, and lemon juice. Fold in the ground almonds and divide the mixture among four greased nine inch layer pans, lined on the bottom with parchment paper or unglazed brown paper. Bake fifteen to twenty minutes, or until layers are faintly browned. Cool on a rack. Beat the egg yolks lightly. Place the yolks and the remaining Sugar in the top of a double boiler and cook over hot water until Sugar dissolves and mixture thickens. Do not allow mixture to boil; it will curdle. Remove from the hot water, beat in the chocolate and gradually beat in the butter. Refrigerate until mixture is spreading consistency. Use to fill and frost the layers. Garnish with the sliced almonds. Refrigerate until firm.

My notes.....before adding lemon and ground almonds or crumbs to egg whites rub between fingers to make sure all the sugar is dissolved.

Use parchment paper, not waxed paper, it sticks to the layers and makes a mess.

Cook egg yolks until thick and you can draw a clear path down the back of a spoon.

Use a food processor to get the almonds ground finely enough. Use short pulses until the nuts are ground. If you just turn the processor on to whirl the blades will heat up and you'll quickly get almond butter.

i've had issues with the whipping cream i found in california. so Kate, do tell what is 'real whipped cream'? off to peruse that cake recipe. j.
