OT-recipe - ANZAC cookies

The NZ in aNZac stands for New Zealand, so although Australians claim these as their own treasures, they belong, rightly, to us both ;-)

Here is the recipe from the "Bible" of Baking, here in NZ - the Edmonds Cook Book(first printing in 1955; the best-selling NZ book ever):

ANZAC Biscuits

125g (4 oz) flour 150g (6 oz) sugar 1 cup coconut 1 cup rolled oats 50g (2 oz) butter 1 tablespoon golden syrup 1/2 teaspoon bicarb soda 2 tablespoons boiling water

Mix together flour, sugar, coconut, and rolled oats. Melt butter and golden syrup. Dissolve Bicarb soda in the boiling water and add to the butter and golden syrup. Make a well in the centre of flour, stir in the liquid. Place in spoonfuls on cold greased trays. Bake 15-20 minutes at 180 degrees Celsius/ 350 degrees Fahrenheit.

Mmmm that sounds good! Thank you. Here is a similar recipe.

Icebox Oatmeal Cookies Cream together:

1- cup lard or margarine 1-cup brown sugar 1-cup white sugar

Add:

2 eggs 1 tsp vanilla

Sift dry ingredients together:

1-½ cups flour ½ tsp salt 1 tsp baking soda 2 cups quick oatmeal ½ cup coconut ½ cup chopped nuts

Blend the wet and the dry ingredients together. Form into 2 rolls each about 1 foot long, refrigerate 2 hours or freeze ½ hour. Slice about ¼ inch thick. Bake on greased sheet at 350° for approximately 8 minutes.

My ex-mom in law made these for years, first at a small cafe she worked at and later for her family. I hope you enjoy them. Diana

Take out the coconut, add raisins, and chocolate or butterscotch chips if you like, and you have a dream cookie.
