Howdy!
Yeah, looks easy & quick. However, as a handquilter I see a fat wad of wasted fabric in the smaller pieces, surrounded by one layer of the other fabrics. Uneven layering tends to lead to uneven wear. And, really, how hard is it make a 4-patch, or a 9-patch, or, even more simple, a charm quilt? Quick & easy. YMMV

I demo'd the technique for our church circle using 6-1/2" squares. It worked well, but I think it takes a little more work to get the raw edges of the center square lined up for the final seam (or maybe it's just me being uncoordinated). It can be done! I haven't tried it with the 10" squares, so I really can't compare.
I also have seen these done with rectangles for the background (still using a square for the center) and one that used a larger square for the center - maybe a 10" square for the center and 8" squares for the background or something like that.
