I think we might have to have a swap, Roberta! My son has fallen in love with Lebkuchen, which isn't that surprising - he loves anything with cinnamon, ginger, cloves....

You once sent me a lovely tin of big round ones - what did I send you for that? Because I think that would be lovely under the tree, from Mrs Claus' kitchen!

Ginger in banana bread? That sounds really good. I love banana bread and I love ginger. How much ginger?

Yeah, I thought I was, too! Try mini chocolate chips [just a handful!] in banana or zucchini bread. Oh, it really perks up the loaf!

OK, here's my usual B-bread, gets made about every 10 days. You can bake as a loaf or as 12 normal-size (6 large) "muffins". (They take less time.) caution: these are US measures! A US cup = slightly less than 2.5 dl Blend in a food processor:

2-3 very ripe bananas 2 large eggs a tablesppon lemon juice a chunk of peeled fresh ginger about the size of the end joint of your thumb. Or more if you really love it or your hands are unusually small. 1/2 cup sugar 1/3 cup butter

Combine in a bowl: a total 1 3/4 cups flour -I use half whole wheat and half plain, but this is somewhat flexible. You could use all plain flour, but all whole-wheat is too dense

2.5 teaspoons double-acting baking powder (European single-acting works OK but not great)

Mix the liquids with the flour and add about 3/4 cup ch>Oh come on! recipes please, I've got very ripe bananas to use

Don't post much but alwasy read. Got some over ripe bananas (not on purpose) and made this last night. Delicious and I didn't have any trouble with measurements. Did have to look up the F equal for 175 C. Anna Belle in Palm Bay
