Truffle-like fudge recipe!

I decided to try it out because I just happened to have the ingredients on hand-wondered why a little voice told me to pick up a bag of marshmallows last week?? It is rich tasting-I cut small squares and coated the sides and bottom with cocoa powder leaving the top shiny - set into small candy wrappers - and now sitting in the fridge tempting me every time I open the door. "Company's Coming" gave this recipe in one of their newsletters recently- excerpted from 'Most Loved Holiday Favourites'

Five-Minute Fudge

1-2/3C. Granulated Sugar

2/3C. Evaporated Milk (or half-and-half cream - this is what I used)

2Tbsp. Butter (or Hard Margarine)

1/2 tsp. Salt

-----------

2C.Miniature Marshmallows

1-1/2C. Semi-sweet Chocolate Chips

1/2C. Chopped Walnuts (I used pecans)

1 tsp. Vanilla Extract

METHOD: Combine first 4 ingredients in medium heavy saucepan. Bring to a boil on medium. Boil gently for 5minutes, stirring constantly. Remove from heat.

Add remaining 4 ingredients. Stir. Beat with spoon for about 1minute until marshmallows are melted. Spread evenly in greased 8x8inch pan. Let stand until set. Makes about 2lbs fudge. Cuts into 36 squares.

ooh, this looks like a good one, I'm saving this, I love fudge and it's so much better freshly made, it's exceedingly rare that I am so desparate for fudge that I'll get it pre packaged.

This is the fudge recipe we used at all those slumber parties and sleepovers when I was in high school. We made it and we ate it! It was also known as "See's type fudge". yummy!

I'll play. Here's mine.

Granny's Fudge

l box powdered sugar ½ cup cocoa l tiny pinch salt ¼ cup milk (I use fat-free evaporated) l stick butter l teaspoon vanilla chopped nuts (I use 1 and ½ cups pecans)

Stir sugar and cocoa together in microwave safe bowl. Stir in milk. Put stick of butter on top of mixture and microwave 2 minutes. (Our microwave is rather violent so I backed down to 8 power.) Stir. Stir in vanilla and nuts. Spread onto buttered pan or foil or waxed paper-lined pan. Refrigerate for one hour. Cut into squares.

(It is okay to pretend that you went to a lot of trouble. Just keep this recipe our secret.) Polly

What is the weight in a 'box' of powdered sugar Polly. I can do the other conversions but not a box.

Shame on me, Dee. It looks like after we went through a long, long time after Katrina with nothing we recognized in the grocery stores that I would know better. My 'box' of 10-X powdered confectioners pure can sugar says it is: one pound ( 453 g) and also approximately 3 3/4 cups.........does that convert for you? I do have one cookbook that does conversions if I need to make more sense. Polly

Thanks Polly. Grams or cups would have been good, both is even better. I can even convert 'confectioners' to 'icing' without help.

I hope you'll try the recipe. Putting a stick of butter (or however You Get to ¼ pound = 4 ounces, whatever) on top of a stirred up puddle sounds so ridiculous that you wonder 'how is this going to work?' . . . but it does. Polly
