If wanted to add a lining to a hood

so I was thinking about making another vest-hoodie for The Monk. But I'd like to line it with a knit I have. How would I go about lining the hood?

If the pattern has an deep allowance for a turned-back edge (around the face), cut that back to whatever seam allowance you are using, use the altered hood pieces to cut both the outer fabric and the knit lining, then sew any darts in each separately, sew the center seam of each, then sew the "front" edges of the hood and the lining together right sides together. Turn right-side-out, and join the now-lined hood to the body of the jacket/vest, finishing the neck edge as instructed on the pattern.

Cut the hood again in the knit and sew the seams... Sew the two together round the front edge, right sides together: turn right way out and carry on as if you had a single layer.

Cool, that sounds very reasonable and not outside the realm of possibility for me

I should have added, pin baste (or hand or machine baste) the neck edges of the lined hood together, so that you are working with "one piece" when you sew the hood to the jacket/vest. Good luck,

Yet another plan: make the hood as written, make the lining the same, but with no seam allowance around the face, baste it inside the hood, hem the hood as usual, install on coat as usual, remove basting.

I'm having trouble visualizing this. I think i'll go draw pictures!!

It's a variant of underlining: laying one piece of fabric on another and thenceforward treating them as one.
