Smocking

In the spring school holidays, I made my daughter a sundress. The classic one with a gathered/smocked top. This was very easy as we found fabric that came with one end already smocked/gathered (the fabric shop in Sydney used the term sheared). All we had to do was sew a seam and add some straps (some pretty ribbon). All very easy and took less than a couple of hours - I can imagine that most of you could have done it less than an hour, but I'm an infrequent dabbler in sewing!

Anyway, I was wondering how easy is it to do the gathering/smocking on fabric? Is it readily doable or should I just stick to buying fabric that is already done. If I could do it myself it would open up a bigger selection of fabric. Any tips on what to do - and not do?
