Hi Carol,

Taking a break from baking and am glad I checked Usenet. I use the pineapple sauce recipe I got from a friend on the ham we have for Christmas. Since we are trying to cut fat in the diet as we get older, this year it's a turkey ham. We use this instead of gravy, since we have scalloped potatoes with it rather than mashed.

Pineapple Sauce

3-4 tablespoons brown sugar 2 tablespoons cornstarch. mix these two dry ingredients together. 1 cup pineapple juice or enough juice and water to make 1 cup.

Just before serving the meal, in a medium saucepan pour in pineapple juice. Stir in sugar/cornstarch mix and bring to a boil, stirring with a gravy stirrer. It will turn relatively clear, and at that point, you take it off the heat and pour it into the gravy boat to serve.

If you have a larger family, you can double it. I buy 2 large cans pineapple rings to have enough juice and put the rings on the table as a side as not everyone likes the fruit, but everyone loves the sauce. It's the only time I've ever seen my dad take thirds on dinner in his life, when he tasted this sauce. It's both slightly tart and slightly sweet (I use 3 tablespoons of sugar so it's got both flavors), and we think it's a good change from gravy.
