OT: Amish Friendship Bread

My neighbour gave me the starter in a ziploc bag on Dec 23, so today was baking day. I made two loaves of Chocolate of course, complete with chocolate chips and coconut. The kitchen smells great! I found an internet site that had lots of variations of batter, and notes about freezing the starter.

I lost friends when I was trying to give that stuff away. They'd hide and refuse to open the door.

Well, if you actually gave away the bread....that would be ok for the recipient. But you give away the starter batter that needs to be "fed" with sugar and flour??? I forget. After the starter gets to a certain volume, you use some for baking and then give some away to friends. It becomes somewhat like a chain letter or pyramid scheme! hehehehe

Many years ago, I was given the Amish Friendship Bread starter & started making bread. The bread itself is very easy to make, but when that starter is sitting in your window sill, just begging to be passed on to a new addict, it's a lot of pressure. I think I was making it every week for a year or longer. I'm sure my friends were barring the door when they saw me with the bread & the jar of starter:) I love the bread - it's so nice with coffee in the morning. Now, I know someone that makes it & sells it at fundraisers. I'm on her call list for whenever she bakes. She also makes fabulous cookies & jams.

I did come across a recipe to make the starter if anyone is interested. I'm not sure why I saved it, but it's in my file.

And the recipes I had at the time I was making this were all very sweet and gooey breads....really hard on the hips and waistline.

Yes please! I'd love to experiment and see if I can make it work with gluten free flour...

Last night's soda bread worked, and was nicer than all the commercial gluten free breads that I've found so far, as well as having greater structural integrity. Meant I could slice it thin enough for toast this morning! It was a bit heavy, so I shall put more milk in next time, to make a softer dough.

Since that worked, I shall try a yeast bread next...

When you run out of friends to give the starter to, you can use it up yourself in pancakes or waffles (add flour, a bit of baking powder, an egg, etc. to make batter). It is also okay dump a batch. Really! Check the laws on the books in your state. It's okay!!

Even better! Those rascals get left on your doorstep in the middle of the night. Or on your car seat while you're in church.

No, Amish Friendship Bread is totally different from Sourdough bread. Someone mentioned that there are recipes on the internet for Friendship Bread starter & I googled it & found the recipes. The recipe I have is about 1/3 of a newspaper page. If you all can't find the recipe, let me know & I'll see if I can scan it & if it's readable, I'll email it to anyone who wants it. (I didn't remember how big it was when I offered it:)

You don't actually have to give it away. I made one batch of chocolate with chocolate chip friendship bread (made 2 loaves, gave away one), made 2 regular loaves of "sourdough type" bread and froze the rest of the starter. I'll have enough to make one more batch of friendship bread and another starter. I decided I didn't want to burden my friends with starter, so I'll just share the finished product instead!

What's seed cake? I've heard of Amish Friendship Bread (lived about 5 miles from the Amish countryside a few years back - their fabric and quiltin' ... well, ya'll already know!!), but not seed cake, except, I think, in a fairy tale years ago ...

It does sound yummy, though!! :)

Hugs!!
