OT Completely: Freezing cheese?

Is it possible to freeze shredded cheese and then thaw it successfully? I know that cheese is frozen on pizza and in lasagna and other dishes. But what about a bag of shredded cheese? Last shopping trip resulted in a 6 pound bag of Mozzarella, which is about 4 pounds more than we can eat before it goes bad.

It is fine for cooking in future, which is probably how you'd use your shredded mozzarella. Cheese for sandwiches or for nibbling is not as good in texture if frozen first, IMO.

should be just fine. we freeze cheese here in blocks. as you said, works on pizza. i might be inclined to break the bagload up into smaller portions tho. ya know not to thaw it in the microwave, eh. not eat'n much cheese in the south pacific due to massive rise in cost in past 6 months, j.

Jeanne, that is so true about dairy costs here too. I've just returned from Spain with the flights going through Amsterdam airport

I've done it accidentally thousands of times putting groceries away, it never seems to have much adverse effect.

I have frozen blocks of Mozarrella before and the bonus is when thawed it ussually crumbles up so no need for shredding for the pizza.

Yes, it is. I buy the shredded cheddar double-packs at Sams Club, and always put one in the freezer. Same with mozzarella. I have tried blocks of cheddar too, but they do tend to crumble after they've been frozen...great for cooking, but not for a cheese and cracker tray!

Piggybacking on here, if you spread it out on some freezer paper on a cookie tray, freeze it, and then put it back in the bag, it's much easier to pull out only what you need. I use this method all the time for seasonal produce and sale items.

Sunny, I always keep shredded cheese in the freezer. Works fine for anything you will be cooking/heating. Most of the time there is no need to thaw it for much of anything. It will thaw either when heated, or quickly thaw if used un-heated.

Yep. Whenever I am going to have to shred cheese, especially like mozzarella where it is not a hard cheese, I freeze it first to make the job easier. Regular cheese freezes fine, the processed sorts often are not so great if they get frozen.

I'm the director of our local food pantry and buy lots of cheese when it goes on sale, sliced, chunk, and shredded. It all goes into the freezer and I've never had a complaint from any of my clients.
