OT - HALP!!! Damsel in distress!

Ladies, I'm in a pickle.

I've got a family reunion to go to tomorrow, and I need to bring some sort of side dish to share with everyone. There won't be many of us this year, only about 30 or so at the maximum. Anyone have a tried-and-true recipe that'll wow them? It has to be simple enough that I can put it together before one p.m. and it can't need to be kept at a particular temperature (no outlets at the picnic area).

Save me, ladies and gents!

Great, easy and fairly fast. Sweet Potatoes and Apples. Peel and thinly slice sweet potatoes. (raw ones) about 4 cups or so. Core and thinly slice apples (can be peeled, but I leave the peel on the apples. It's faster.) Toss with brown/white sugar, cinnamon, whatever other spices you like with sweet taters and apples. If you have some, toss in some raw cranberries. (Someone made it once with whole berry cranberry sauce and a bit less sugar.) Dot with some butter and bake, covered until done. (Somewhere around

This is quite good --

Oriental Coleslaw

1 pkg. shredded slaw or broccoli slaw

OR:

4-6 shredded broccoli stalks, 2 shredded carrots, & ½ c. shredded cabbaged

½ cup sliced green onion

2 pkgs. noodles- oriental flavor (break noodles while in pkg.)

1 can sliced water chestnuts

1 cup slivered almonds

Dressing:

½ cup oil ½ cup sugar

1/3 cup vinegar

2 ramen noodle seasoning (included in noodles from above)

1 T. soy sauce

Mix dressing and pour over noodles and vegetables. Let chill 2 hours or overnight.

It doesn't have a mayo based dressing -- so it is a little easier to "hold" during the day. Very tasty!

If you're needing to hold a dish at a cold temp, a reliable support is to freeze something serious like your 9 x 13 plain old sheet cake pan filled with water. It will stay cold a long time and maintain your coleslaw very nicely. Polly

I'm loving this idea....but how many apples? 4 cups like the sweet potatoes? More? Less? Should it be 4 cup total between the two?

And how do I tell it's "done"?

Greek Salad:

Ripe tomatoes, chopped into small chunks Cucumber likewise... black piied olives in brine, well drained feta cheese, cubed lots of fresh basil leaves

Dress with a little olive oil and some Balsamic vinegar about ten minutes before you serve it. Best served at room temperature, but if you have to travel before, make with cold ingredients and shove in a cool bag for the journey.

It's too late since it needs to marinate overnight and I'm sorry I didn't see this sooner, but you all need this recipe. It was so good and easy and just fun

Marinated Cheese

1- small block sharp Cheddar 1- small block Colby Jack 1- small spreadable cream cheese 1- Bunch green onions

Slice cheeses & sandwich with a healthy helping of cream cheese. Place in rectangle dish, so cheese is standing on it's side. Sprinkle with chopped green onions.

Next, mix together well

1- dry pkg. Good Seasons Italian Dressing 1/4 C. white vinegar 2 t. sugar 2 T. water 1/2 C. olive oil Pour over cheese & refrig. overnite.

Serve with Ritz Veg. crackers. Enjoy!

Somebody brought this to the Quilt Show today (we feed the volunteers and vendors) and everyone loved it!

How does one consume said yumminess? Is a spreader used to smear it on the crackers? I'm a bit confused. Looks utterly heavenly, though!

Nope, just lay it on the cracker or eat it on it's own. It doesn't soften or anything, but it sure tastes good! finger foods!
