OT how to cook tough steak

Ok I got some chuck steak from a local farmer. He says it's really tough so I better know how to cook it or no one will eat it. Not wanting to waste food, especially beef. How do you cook it? The only thing I can think of is the slow cooker with a can of tomatoes. Any suggestions? Thanx Joanna

Or a pressure cooker, if you have one.

If not, another option is slice it thin, pound it with a tenderizing mallet, which will tenderize it, and make beef stroganoff :)

Excellent thought, especially if you start by sauteing some minced bacon and onions, then browning the meat, cut in 1" cubes, in the pan. Put all in slow cooker, add large can of tomatoes, 2 tsp of caraway seed, 2 bay leaves, and a dash of cayenne. I usually add a beef bouillon cube and a tsp of sugar, and you could also put in some garlic and a 1/2 tsp of thyme, if you like. Serve with noodles for the best goulash you ever ate! Chuck is tough and needs long slow cooking, but is also very flavorful, perfect for a stew.

A tablespoon of vinegar will help to tenderise the steak. Just put it in with the stock. It can be wine vinegar or malt. I use it often when making a stew.

I am having steak today but mine will be fillet steak, nice and tender. It is a special day because it is my 73rd birthday. Hugs Shirley

Tough cuts of meat should be cooked slow and wet. A slow cooker is excellent, or pop it into a Dutch oven and cook it in your oven for a while. Think pot roast, chili, stew -- any braise will work. If you don't have a long time, a pressure cooker will work, too.

We use chuck steak in fajitas. Cut the raw steak in 1/4 inch strips about 3 or 4 inches long. Throw them in a hot pan and simmer with a small amount of veggie oil. Add your favorite zesty flavor. They will turn out a bit chewy but tastey.
