OT - Peanut Butter Fingers recipe

Hello, I received this recipe in an email from sewthankful.com and thought I would share. It sounds good, if a little unhealthy. At least you would go with a smile on your face.....

Peanut Butter Fingers

1/2 cup butter 1/2 cup firmly packed brown sugar 1 unbeaten egg 1/3 cup peanut butter 1/2 tsp. baking soda 1/2 tsp. baking powder 1/4 tsp. salt 1/2 tsp. vanilla 1 cup flour 1 cup quick oats

For the icing you'll need 1/2 cup chocolate chips, 1/4 cup peanut butter, 1/2 cup powdered sugar, 2 - 4 Tbsp. milk. Preheat oven to 350 degrees. Combine all dry ingredients in a medium bowl and set aside. In a different medium size bowl, cream butter and gradually add the brown sugar. Blend in 1 the egg, peanut butter and vanilla. Gradually add "combined" dry ingredients. Lightly grease an 8" x 8" pan. Press dough firmly into prepared baking pan and bake at 350 for approximately 20 - 25 minutes. Remove from oven and immediately sprinkle the top with 1/2 cup of chocolate chips (you want them to melt). Now in a small mixing bowl combine 1/2 cup of powdered sugar with 1/4 cup of peanut butter. Gradually add 2 - 4 Tbsp. of milk until you reach desired consistency. Spread peanut butter icing on top of the chocolate chips/hot cookie base. You want the peanut butter icing to swirl with the chocolate. Cool completely and cut into 1" x 2" bars. ENJOY!

3 in our house would go for sure, but most definitely not with smiles on our faces, being peanut allergic.

tho no one here is allergic to any nuts this still got me thinking. found this info on making your own nut butter/paste.

nuts on there.i've just recently made my own tahini, easy peasy.i was making hummus from scratch for the first time and i had some sesame seeds in the pantry so toasted them in a dry pan, then whizzed em up in the food processor but nothing else was added.had too much for the amount of chick peas/garbanzo beans i had so popped the rest into the fridge til next batch is made, probly tomorrow as i'm nearly out of hummus. doesnt last long here as i love it as an alternative to margarine/butter/mayo on sandwiches/pita-bread etc.as long as theres enough garlic in it of course, lol.just thot this might give you an alternative to the peanut fingers.cheers from foggy day in auckland,jeanne
