OT sweetner for diabetic cooking?

Oh ye who are experts in all things - My bachelor neighbor who gave me the

12-point buck is diabetic. I would like to bake some cookies for him for a Christmas happy and have done the googling-around bit but need real guidance. Many of the recipes call for this or that sugar substitute. Some of them, I'm told, taste like toilet bowl cleaner. Having tasted neither sugar substitutes nor cleaners, (well, not when I was sober), I need to know what is r-e-a-l good. Or, is there a cookie recipe that doesn't use anything that diabetics should avoid and doesn't call for an artificial anything? Help me? Polly

Polly, Here is a recipe for Meringue cookies that have been a favorite of our family and friends for years.......

Meringue Cookies

2 egg whites 1/2 tsp cream of tarter (it is possible to omit this if you have difficulty finding it) 2 T Splenda Grandular (it's not the Blend, just the bulk package of Splenda)

Important tips for success: Have egg whites at room temperature Use metal or glass bowl, not plastic Preheat oven to 250 degrees

With mixer, beat egg whites & cream of tarter till soft peaks form. Add splenda 1 tsp at a time, beating well after each addition to be sure it is dissolved. Beat till meringue holds it's shape. Fold in 1/4 tsp vanilla (use spoon for this step, not mixer).

Drop teaspoonfuls on parchment paper & bake 40 minutes. I don't remember how many it makes.

This recipe was on a diet forum I was following a couple years ago--the 2 egg whites are equal to 2 oz of protein & these were an acceptable source of protein for the plan.

Can I clarify the amount of Splenda because it just says 2 T are they tablespoons or tea spoons. Thanks Shirley who likes a little sweetness in her diabetic life. VBG.

Big T's are tablespoons, little t's are teaspoons!

I realize not everyone can control with diet and exercise. I'm glad that so far I can. I hate taking pills and will work hard to keep from taking more than I already do.
