Coming up, quaintly called in the family - Grandma's Tomato Soup!
1 tin peeled tomatoes 2 beef stock cubes 2 tbs tomato sauce or paste 1 chicken stock cube or 1 tsp sugar 1 chopped onion 3 thin sausages 1 tin water (or more) parsely egg noodles or riceChop or blend tomatoes, simmer tomatoes, sauce, stock cubes, onion and water for 15-20 min. Form sausage meat into small balls (messy bit this is, you squeeze the meat out of the skin!) add to soup and cook through. Add noodles or rice, parsley, salt and pepper to taste (and whatever other herbs/spices you might like, I also add garlic). Cook until the noodles/rice are cooked.
For a spicier soup thinly sliced rookwurst (I think it's a Dutch or German type of sauasage) may be used instead of sausages.
A standard size of tin of tomatoes will feed 2-4 people. It's a very quick soup to make.
