OK, now I know why I never made this. I just dug out my 1936 Pennsylvania Dutch Cook Book (published in Reading, Pa.) and here's how the scrapple recipe starts:

"Separate one hog's head into halves. Take out the eyes and brains."

is pretty enlightening. Sounds good to me as long as the seasonings aren't overpowering. I bet it is really tasty with apple butter and a side of scrambled eggs.

I'm not even looking - but I'm betting it's Taylor Ham. DH, being from lovely Bergen Cty, NJ is addicted to the stuff. There is nothing healthgful about it - it's kind of like a spicy, greasy not-kosher salami. Anyhow - we can get in the local groceries - but whenever we're in Jersey he has some fit about stopping at a diner for "Taylor Ham" . It's okay - but I have different dietary ideas.

I also won't let him eat scrapple - as from my perspective it's basically the allowed to feed to humans equivalent of ucky dog food. Though, I'm sure that the home-made stuff can be quite tasty. But, we're not in the have to use all the leftover parts of everything economy so...

No - not Taylor Ham. I'll look at the store to day and see if it is in stock and I will post a link. I understand about the dietary thoughts.

I've enjoyed it but wouldn't go out of my way for it. My grandmother used to make head cheese. I still won't touch that.

Ummm...fried Taylor ham sandwiches. Haven't had one in years...haven't even thought about it, but now that you bring it up, I WANT ONE!

Won't let him? Heh. I was raised that such phrases don't belong in a marriage. *grin* Besides, it's not about using the leftover parts anymore, it's about the fact that it TASTES GOOD! Not for everyday, mind you, but oh, what a treat!

I knew you'd get it. I swear - as soon as we hit the jersey line - DH starts in. Seems to me he's had burgers topped with taylor ham. It is tasty - just not an addiction for me - for numerous reasons!

Well, we didn't have the "obey" part in the vows - but...I know you understand. DH is like many guys who've played sports, seriously, all their lives, a bottomless pit when it comes to inhaling food. And, well, while he's pretty fit, he does have a genetic cholesterol issue, so we watch his diet. But, the truth is - when we're someplace with "scrapple" on the menu

- he just looks at me, says "I know" and orders whatever - but not that.

I'm sure you're right. I think that every place we've been where they have it - the smell just puts me off. Of cousre, I'll be honest - the dog's food is of the type with no beaks, hooves, etc - so this is my picky thing. I do get Taylor ham occasionally....

You're getting old and senile, woman! We've had this conversation - DH is from Ho-Ho-Kus, which is next to Saddle River.

I am most definitely not a Jersey girl - big grin. No, instead, I have the traditional Long Island, move to Miami, then left the sun and been north since roots. Of course we had a couple of places on LI (I went to school in Oceanside and then Massapequa). My grandparents had a house on the water in Atlantic Beach - think the movies the Godfather and the Flamingo Kid. Summers were at the beach club - exactly like in the Flamingo Kid movie (the beach clubs in Atlantic Beach are on the ocean side of the island, our place was on an inlet). The neighborhood - well, let's just say that the end of the street had some likeness to the actual compound of the family upon which the Godfather was based. And the next door neighbors - well, if you've ever seen the movie, The Freshman with Marlon Brando - the house was like that - complete with a high redwood fence, and guys with sunglasses on the little overhang over the front entry porch. But, it was a great house, and my grandmother and my parents almost killed my grandfather when he spontaneously decided to sell that house and live permanently in Florida. Then, one of his pals arranged for the moving van - which mysteriously blew up in some rest stop kind of along the side of the road on the NJ Turnpike. Fortunately, the good china, the furs, and the crystal were in the car with him, and my great aunt & uncle driving down.

Well, enough of my roots. FWIW - grandfather was in show business/sports business - not in the mob. Just knew how to have a very interesting assortment of friends...

LOL - of course. But, y'know - I've had the full tour of scenic Bergen county on numerous occasions. Ho-Ho-Kus is so small, that DH's grammar school (k-8) has a reunion every couple of years. And, most of them still live in the area - or nearby (Ramsey, somethingCliff). And we go, of course.
