OT: Food in Like Water for Chocolate (Pitayas)

Hey again. I am planning to have a party after new year's where each couple will make and bring one of the recipes from the book _Like Water for Chocolate_. In the recipe Quail in Rose Petal Sauce, the recipe calls for one pitaya.

I looked up pitaya last night. It is the red fruit of a cactus-like plant. Actually it comes in red and yellow varieties. At my grocery store, there are red prickly pear fruit and yellow horned fruit. Anybody know if one of those is equivalent to pitaya?

The recipe also calls for three drops of rose essence, which I'm going to assume is essential oil. Since that costs the earth and I'm not kidding, I may be skipping that part. ;)

You could probably substitute tunas (prickly pear fruit)for the pitaya. Even if the taste isn't quite the same, the spirit sure is--cactus fruit and all that. Pitaya are expensive and hard to find.

For rose essence, try rose water and maybe use a bit more. Less costly and less overpowering than rose essence. RW is usually available where Middle Eastern goodies are sold.

I don't know about the pitaya, but I do know you can sub rosewater for essence of rose. Use to taste, you won't be disappointed.

Have you made any of the recipes from the book? Some sound great, some not so much. I'm all about some ethnic cooking tho, especially Latin. Last year when I went to Belize (mission trip (non religious) to teach pottery) I learned about salbutes - O M G out of this world yum.

One of our favorite East Indian goodies is gulab jamen. They are deep fried milk balls in rose syrup. Rose flavored goodies are amazingly nice to eat!
