OT: yummy breakfast

I saw a recipe in BH&G this month for fruit pancakes. You take an apple, pear, or peach and cut it in rings. You place the ring in the pan and then pour the pancake batter over the top of it. I tried it with apple, and used my normal pancake recipe. They turned out very pretty, and were OH so yummy. I really want to try it with the peaches. As I was eating them, I thought...you could do this with halved strawberries.....place them in the pan in the shape of a heart for Valentines Day! Anyway, just thought I would share :-) I never would have thought of fixing pancakes like this.

Cooking isn't my thing but I might try this. Do you flip it after you pour the batter over it and does the apple get mushy?

I love pancakes with bananas, but have not tried any other fruit. Peaches sound great. Sandy

Yes, you flip it as you would a normal pancake....once the batter starts to bubble and the edges dry a bit. The fruit does not get mushy...but does soften ( like a baked apple). The edges that touch the pan carmelize a bit. Yummmm.
