Knot at the End of a Seam

I want to do a little hand sewing.

How do you tie a knot in the thread when you're finished with a seam or whatever, so that the knot is close to the fabric and does not pull out?

Pictures would be a great help.

Take a couple of back stitches, then insert the needle under a stitch and bring it out the other side, leaving a loop of thread on the beginning side. Insert the needle into that loop, and pull, thus making an overhand knot. Repeat.

If the seam will be under heavy stress, you can substitute another knot for the overhand knot, like a surgical knot. Ethicon has a good tying manual online, or did last time I looked.
