The question in the Subject line of this message has been a topic of some interest on the Bread Bakers Guild of America Yahoo Group this period. Those of you who post here and who are also members of The Bread bakers guild and consequently that group are aware of this. Others on this News Group may not be aware of this topic.
The Artisan web site posted an article which addressed this issue in
1999. We have re-posted it on the Bread Bakers Group and it was well received as still timely and possessing some degree of merit. We are posting it here for those who may wonder about the impact of supermarket bakeries purporting to make "artisan" breads upon the true artisan baking movement in America.Here is the link. Please feel free to join the fray, as there are probably as many opinions on this subject as there are bakers!!
