Artisan Upload and Revisions-April 20, 2004

Hello All:

We have two new recipes from Claudio of Claudio's Corner on The Artisan that you may enjoy. Funnily enough they are for Irish Soda Bread! Why put Irish Soda Bread on a site that specializes in things Italian? For one, Claudio is a third generation Italian baker, and that should qualify him if he chooses to make a bread of our Irish Brethren. Secondly, its a bread that Claudio makes on request at his bakery, so it is well thought of in and of itself. We have included a Home and a Bakery version.

have also edited all five of the Ciabatta recipes in order to serveyou better. Over the years we have "tweaked" these recipes. They canbe found in the Ciabatta Suite.

another topic, I have noticed that some have had questions aboutyeast, yeast conversions and bakers math. Most, if not all, of thesequestions can be found on The Artisan, many in The Yeast Treatise. Irealize that time is short for many visitors, so it is convenient tofind a rapid answer to a question. However, we believe that it isimpossible to make good breads without a fundamental knowledge of theprocess of bread baking. Some of the facts needed to bake can begarnered by asking questions, but many can only be found, thenunderstood, by reading and study -- a somewhat lengthy process. The Artisan has always offered free technical support to all who ask. Thus if after reading an offering on the site, something is unclear, or more information is necessary, feel free to send us a note, and we will be glad to try and clarify anything that we can.
