OT: Question of Legality

Ah, I forgot for the moment your shared Bergen roots with DH. So, now I have to believe him about the fabulous Kaiser rolls. Next time we go up there, I'll be sure to bring some back for you, Sue.

Yup, I'm much more in love with great, seaded rye bread. So much so that I'm working through bread recipes to get a good one baked by myself. Though, I will admit - the Wegman's from the bread bakery rye - which is pricey - maybe $4.50 a loaf - is really good. Their Russian bread, and pumpernickel are also really good. The packaged rye bread - kind of disappointing. Darn it.

That is so true. My DGM's brother "Moishe" was a baker, and we always had such treats when he'd come to the house. Growing up, spent a lot of weekends at my grandparent's house - and there was always fabulous bakery stuff. If not from Uncle Moishe, then the local "Ebingers" . And moving to Miami - plenty of great, small, bakeries. Same in Pittsburge- there are a couple of small, well-known, bakeries that battle it out. But, here - not so much. There are great pastry shoppes. My favorite bread bakery = he brought his ovens from France - and they do make great, artisan, breads, rolls, and cakes. In the hood here someone opened a "bakery" called "Incredible Edibles" - very nice pastry, cakes. But, for great bread, well, the specialty chains seem to be it - besides Cenan's.

Ah, now I want some good rye bread. Darn you.

I know exactly. And he will be drooling. Last week he snuck a roll of "Taylor Ham" into the house....Then he had me buy rolls so he could have Taylor ham & egg sandwiches. Those Jersey roots.

LOL- that reminds me of the story of a deli in Salt Lake City. I was out there for work, and listening to a story on the local NPR. They were interviewing a doctor who had opened a deli, his reason "When I was offered bologna on white bread with mayonnaise as deli - I knew that I had to do something." Living in ABQ mostly at the time, I felt his pain - bologna on white with mayo is most definitely not deli! So this guy was flying in meats from NY. Shortly after, some folks did the same in ABQ, opened a bagel & deli place - would have shipped in meats, fish, etc.

Too bad you don't have "When Pigs Fly" bread getting down toward you. Their NY Rye is the best. Lots of seeds, great texture. DH complains it is too thick, but pure heaven in my book

Ah, you can get those at any good Jewish ethnic bakery. I know for sure that you can get them in South FL, and in Pgh, and I'm prety sure I've gotten them at a couple of different places here -TJ Pumpernickels in Olney, The Bagelry in Silver Spring, and Bagel Buddies in Fair Oaks. Maybe at Parkway in SS as well. I bet you could get them someplace in Pikesville...Haven't seen them in Wegman's - yet. I love those things. In South FL, the nice deli restaurants - Wolfies, Rascal House, TooJays - in the olden days - would put a basket of rolls on your table when you got seated. As well as pickles, sauerkraut, coleslaw - sometimes even pickeled beets. Anyhow, the roll basket would always have those log rolls with the caraway & salt, plus the fight over the onion rolls - like a soft bread rolled up with onion filling - often in pumpernickel. Yum. Yum.

Now, you're really making me miss "home" . I wonder if I could convince my DA to send a package of special rolls, etc from Boca? I think I'll work on it - and if I'm successful will get some for you.

Yes, but wikipedia needs to be taken with a big handful of salt. Just 'cause it's on the net, or in wiki - doesn't mean it's true. My pharmacology prof last year actually had to send a notice out to the class (we had to write a bunch of drug papers) "Wikipedia is NOT AN ACCEPTABLE REFERENCE" . Now for researching using web stuff, you have to verify the website, links to valid companies/schools, etc before using thimg. With my Advanced Medical life support class - had to do a term paper, same in Peds/Geriatrics - and because of the strictures on timing of relevant research or events - had to learn acceptable web citations, etc. Pretty interesting learning the way to cite. A bit different from the library science class I took 30+ years ago (for the easy A of course - but it was well worth it).

I'll look. We have Great Harvest Bread Co, which makes great Challah. Don't know about their rye. And Wegman's carries "The Baker" and "Vermont Bread Co" . Plus the standards. They also get in challah, rugelach, bobka, from a bakery in Brooklyn. The bobka is quite good - really.

Darn it - I've told DH we're back to the "lose weight" regime ...and here we are having the bread talk. I'm actually going to bake some French country bread, pretty easy - just a "Gros Pain" - cause we're about out of bread, and I could do that. Which would go well with some stew thing for dinner.

I remember those, but I don't like caraway so they weren't my favorite. My mother would get mad as hell because I would sit and pick off the caraway seeds one by one. I can still picture her face when I didn't manage to get them on the table and dropped them on the floor.

ELlice, I have been pondering with your offer of a care package of Kaiser rolls.(bagels would weigh to much) If you send me a price I will send you money in march. For rolls and postage. Barbara I still miss home. Our local farm fresh just got in Halvah.

Actually, there's more than one opinion about it among academics, also. I recommend it as a good place to start, but ask my students to find corroborating sources if they want to quote it.
