ok another page of recipes from the same site. there is one that has to be the simplest fruit cake i've ever seen. bakes in one hr and only three ingredients, good grief. even i could do this one with no mistakes, lol. the raspberry/white chocolate muffins and caramel melt muffins look like = 'to die for' ones. also the super simple passionfruit cheesecake.=20 she might have our xmas sweets all covered on the two pages of recipes, = lol. cheers, jeanne

I can confirm that the fruit cake recipe is lovely - and very popular here. We soak the fruit in OJ overnight.

Another variation you might like to try (since everyone here seems to be chocolate obsessed!) is to substitute coffee for OJ, and chop up a large bar of furit and nut chocolate to add to the batter in chunks.

This recipe came from a friend and makes a flatter, richer, continental-style fruit cake that is nice with coffee.

Combine a cup of self raising flour, a 375g pack of mixed dried fruit and a 395g can of condensed milk. Mix well and press mixture into a 23cm pan lined with baking paper. Cook at 160C for about 45 minutes, or until cooked when tested (do not overcook). Cool in pan.
