I got your card and how did you know I was baking and not resting? LOL Thanks for another recipe, it looks yummy.

Larry made an oops that tastes oh so great so I'll share:

1 bag of white chocolate chips, melted 1/4 tsp Peppermint Extract, 2 boxes candy canes, crushed to nearly fine consistancy

mix the melted chocolate chips and mix in the extract, should be lumpy

create balls

Roll in candy cane mixture

Refrigerate until hard

Yum - those sound good - but not on my "diet" (Trying to maintain through the holidays - but still must show some restraint) :)

I did make peppermint merengues that were delicious, and low in calories...

3 egg whites cream of tarter 1/2 C sugar pepperment extract (I used schnapps, but they don't bake as well) crushed candy canes (about 5-7 mini ones)

Beat egg whites and cream of tarter until stiff peaks form. Gradually add sugar.

Fold on all but a little of the crushed cany canes, and the peppermint extract.

Dollop onto sprayed or covered in parchment cookie sheet , sprinkle tops with remaining candy cane sugar.

Bake at 250 until hardened - approx 1 1/2 hrs.

Hi Kate. sounds like a yummy mistake! :-) I make a candy similiar to what you are describing, only I use white almond bark instead of white choc chips. It melts smoother. When I melt it down in a double boiler, I add the candy canes, peppermint extract and a very small drop of pink food coloring, mis it together with a dry spoon. (if it is the least little bit wet the chocolate will sieze and be lumpy) and then pour it out on wax paper on my kitchen counter top, and smooth it out evenly in a square. After it sets, I chop it up into squares. I swear it tastes just like the Peppermint Ice candy squares that Fannie May Candies sell!
