Keep applying the latex paint as it's not very good at sealing the ends. It works better than nothing but not nearly as well as other things. However, you started down that path so stay with it.

1) Keep the logs up off the ground 2) Plenty of air circulation around them. Don't have a fan blowing on them but just don't pack them tight 3) Out of direct sunlight 4) Out of rain/snow/etc. 5) Split them down the center (pith) if possible and/or appropriate 6) Cut them into blanks just a little oversized (10% oversized maybe) for their intended later use if possible/appropriate and reseal the endgrain (or everything if they're really prized but it takes longer to dry). 7) Wait patiently!

turn the oak as soon as possible as it will tend to check, split and become difficult to use in a few weeks - even if you seal the ends.

The maple - put that in the dirt and put a plastic bag over the rop - it iwll hold the moisture and cause it to spalt in a few short weeks - that's if you want spalted maple.
