Ash, no matter how polished, tends to snag yarn. Rosewood, ebony, dogwood, linden, are much better. Bamboo is somewhere in between. I do not think that wood is strong enough for practical, working 000. I mean you could have some stuck in a ball of alpaca as decor by hearth, but they would be what my DW calls "dust catchers."

If you want 000s, and are not going to use a knitting sheath go for stainless steel, or just buy them. See for example

If you are going to use a knitting sheath get steel piano wire. Buy theright wire, and you can form and polish the tips by hand with emery paperand crocus cloth in a matter of minutes. No lathe is needed. (I actuallyused an electric drill and a small bench grinder to make sets of 5 DPN atdifferent lengths. (I.e., 6", 10" 14", 18") Carbon steel (music rod/pianowire) has a real nice springy feel while knitting and was my choice.(Stainless steel does not have the "spring" that makes for the wonderfullyfast knitting of carbon steel.) But, my 000 must either be used every dayor carefully wiped down with WD40 prior to storage : )Fingerprints cause my 000 to rust even here in Pleasant Hill where RHaverages less than 40%. Somehow # 6 made of the same steel and with thesame polish, are not as susceptible to rust. Of course, the steel # 6 are soheavy that they do not get used much, so every time that I take them out, Iam surprised that they are not rusted.
