Cherry Crunch Pie

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Prepared crust 1 lg Egg yolk -- slight beaten 21 oz Can 1 tb Cornstarch -- mixed with 12 tb Water 2 tb Sugar 2 tb Light brown sugar -firmly packed 1/3 c Flour 1/3 c Quick oats 3 tb Melted butter Graham or butter flavor pie Cherry pie filling
Preheat oven to 375 F. Brush bottom and sides of crust with egg yolk. Bake on baking sheet until lightly browned, about 5 minutes. Remove from oven. Place cherry pie filling in a bowl. Combine cornstarch and water to make a smooth paste. Mix into pie filling and spoon into prepared crust. Combine sugar, brown sugar, flour and oats. Mix in melted butter. Spoon mixture over pie filling. Bake at 375 f. on baking sheet, 35 minutes. Cool at least 4 hours on a wire rack. Serve at room temperature.
