Chewy bread

What's the best way to make bread more chewy? Also what are the results of spraying the top of the loaf with water while baking?

High Gluten flour or Bread Flour will give you a chewy texture inside, and spraying the crust with water while it is baking will give you a crispy crust. Too much spraying will give you a thick crunchy crust.
