I am searching for a special gingersnap recipe.
Here's the catch: I am trying to recreate a cookie that comes from a Gualala, CA bakery. This is large, very dark brown (chocolate colored), rather chewy, with a nice assertive ginger flavor, and just a hint of molasses and cloves. All of the gingersnap/ginger cookie recipes that I've tried are incorrect for the cookie that I've been trying to make. I am not even sure how the bakery makes the cookies so dark.
Does anyone have any suggestions or know the cookie that I'm describing?
