2 sticks (1 cup) salted butter at room temperature
2 cups sugar
4 eggs
3 cups all purpose flour
1/2 tsp. baking soda
1 cup milk
splash of vanilla extract
2 Tbsp fresh lemon juice
2 Tbsp lemon zest
-Preheat oven to 325º and line the cupcake pan
-In a bowl, cream together the butter and sugar with an electric mixer.
Add the eggs one at a time and mix until creamy. Add the milk and lemon
juice and lemon zest.
-In a separate bowl, combine the flour and baking soda. You can either
use your hands or a whisk to do this.
-Now add the dry ingredients to the wet ingredients. Careful not to
over-mix!
-Divide the batter up into prepared cupcake baking sheet.
-Bake for between 17 and 21 minutes.
-Allow cupcakes to cool completely before frosting.
-Enjoy!
