OT Lime Melon Salad

LIME MELON SALAD

1/4 cup sugar 1/4 cup water 2 tsp finely shredded lime peel 3 tbsp fresh lime juice 1/8 tsp cayenne pepper (optional) 4 cups cubed watermelon (half a small melon) 4 cups seeded and cubed honeydew (half a small melon) 4 cups seeded and cubed cantaloupe (entire small melon)

For lime syrup, in small saucepan combine sugar and water; cook over medium-high heat. Bring to boil, cook 3 minutes until syrupy. Remove from heat, transfer to small bowl. Cool 10 minutes. Stir in lime peel, juice, and cayenne pepper. Cover, refrigerate.

To serve, combine melons and lime syrup in a bowl. Makes 12 1-cup servings.

Cayenne pepper gets spicier as the salad sits. For milder heat, add a dash of cayenne just before serving.

Each serving, 87 calories

For something different, you can add mint or ginger to the syrup.

Print it out and tape it to the inside of the cupboard door. That's what I do with my favorite recipes. :)
