OT: Brownie Mint Recipe

Speaking of recipes . . . maybe someone here has a recipe for brownies with a layer of green mint cream across the top. I had them at a party (got the last one) & they were absolutely delicious, but I have not been able to secure the recipe. (I suspect it is a family secret.) Can anyone help???

Green mint brownies:

Make a batch of regular brownies, cool completely in pan.

Make a bowl of regular white frosting, I usually just stir a little milk and softened butter into powdered sugar. Then add maybe 1/4 to 1/2 teaspoon of pepermint flavoring to taste, then a few drops of green food coloring. Mix all these ingredients until the consistency is fairly thick and spread over brownies.

After you spread the green frosting onto cooled brownies, layer a cup or more of semi-sweet chocolate chips on top, place in pre-heated oven for

2 or 3 minutes until chips are soft, remove from oven and immediately spread chips into a thin chocolate layer over the green frosting.

I make these all the time for church functions, tastes great with very little work. Any brownie mix will do, as will any white frosting. A small bottle of peppermint flavoring can be found at any grocery store on the spice aisle.

Another yummy thing I've used lately to make something with a similar flavor is green-mint-chocolate chips added directly to the brownie batter before baking. I also find these chips locally.

I've done this two ways.

Way one: soften a package of cream cheese with a mixer or food processor, blend in a tablespoon of softened butter, a dab of sugar, then add a couple of drops of mint flavoring oil and some green coloring. spread over warm (but not hot out of the oven) brownies.

Way two: combine a can of sweetened condensed milk with a bag of white chocolate chips. Heat until chips are melted (over water on the stove, or for a minute or two in the microwave), and stir in a few drops of mint flavoring oil and some green coloring. Spread over cooled brownies, and pour out any excess to set up as mint meltaways.

I prefer to use creme de menthe oil though it takes more than peppermint oil. If you use the first method, you can add in a tablespoon of cornstarch and an egg, then layer it over half the brownie batter, put the other half of the batter over top of it and then bake the brownies, this only works for cakey high rising brownies. I borrowed that from a ribbon cake recipe when somebody requested andes mint brownies.

Make your favorite brownies, home or packaged mix and whip this up:

Ingredients First layer:

2 Tablespoons soft butter 1 Tablespoon milk 1 cup sifted confectioners sugar 1/2 teaspoon mint extract 3 to 4 drops green food coloring

Ingredients Second Layer:

2 squares baking chocolate 2 Tablespoons butter Prepare brownies in a 9 x 13 inch pan. Mix 2 Tablespoons butter, milk, sugar, mint extract and food coloring together until smooth. Frost brownies and put in refrigerator to harden frosting. Melt chocolate and 2 Tablespoons butter together, cool slightly, and gently spread over mint frosting layer.

The director of our library (male) was just last week talking about a similar recipe. He takes a store bought brownie mix, mixes as directed. Pours 1/2 the batter in the pan, then (and this is the good part) you lay on top of the batter ANY candy bar you like - Reese's peanut butter cups, York Peppermint Patties, Milky Way, whatever - cover the batter with candy, then pour the rest of the batter over the candy and bake.

Back away from the chocolate and no one gets hurt! This could be why we've decided to keep him as a director - he knows women need chocolate!

Oh my goodness but that sounds yummy! And, I'm trying to lose weight (12 lbs so far). I probably just gained 5 lbs reading about this one!
