OT??? How it all happened...

I was going to make a loaf of banana bread for snacking- that's *A* loaf. = But I mashed too many bananas so I had to double the recipe. With all th= at banana bread I should make it healthful, right? So, I used whole wheat= flour to ease my conscience. Then I decided blueberries go nicely with b= ananas, so I added a whole bunch of them. Then the pretty blue color of t= he blueberries needed some contrast color, so I added marachino cherries to= liven it up. (Does color coordinating my muffins make it on topic?) I d= idn't have any walnuts, so I used twice as many pecans as the recipe called= for. Then I decided loaves would be more difficult to thaw for eating wh= en I had to freeze soooo much banana bread, so I baked it in muffin cups. = Now I have THREE dozen BIG muffins and very little freezer room. =20 And that's why I HAD to have Whole Wheat Banana Blueberry Cherry Pecan Muff= ins for dinner. ;-) =20 YUMMY!!!

Oh, I can relate! I bake every week or so, usually it is going in to work. = This time of year it's zucchini bread. [I discovered you can shred it then = freeze it in zipper bags to spread the zuke goodness out a bit later in the= year] This year is one for experimenting with various add-ins, including b= anana, mini chocolate chips, coconut, crushed pineapple, nuts, raisins.
