OT lemon cakes

While thinking about birthday's today I was remembering that my grandma always made lemon birthday cakes. They were sort of a heavy butter type cake with nuts and raisins. There is no known recipe but I would like to try to get close to hers. Anyone have a cake recipe that sounds like it might work? Taria

Taria, I probably have one in my collection too - but none I could promise you is great that includes nuts and raisins. Just a suggestion though. Whatever recipe you choose, for goodness' sake use real lemons. I'm not a maniac about doing everything the hard way but freshly-squeezed lemon juice is the star ingredient in the lemon cake I love to bake. Alton Brown even put a lemon squeeze in his chicken soup tonight. I love that guy. Polly

I have a light coloured fruit cake recipe that has almonds and sultanas in. You could put lemon in that...

i'll sure take your word on that, S. i had no idea one could even buy it in that quantity unless you went to a catering supply type place. so what zest/juice would you think is right as a substitute? i'm chock a block with real lemons so i wont be even trying to find that much extract here. :)) cheers, jeanne
