OT: need side dish suggestion

My DH got an electric smoker for Christmas and since then has spent each weekend smoking what we call "big meats." Our boys are coming home for the weekend and DH wants to smoke a salmon. His recipe for this is great but I am stumped about what to serve with it. Tossed salad seems a little blah.

Any suggestions?

Cook some long-grain rice in a little vegetable broth (basmati is wonderful, if you have it), toss in some golden raisins, toasted almond slivers, and/or green peas. The lightness of the rice contrasts nicely with the salmon.

I usually do rice with salmon. I keep some wild rice around and put in a tablespoon or so of that and it makes for good texture. I use chicken stock but vegetable would be good too.

With smoked salmon you really need a good fresh salsa. I like mango salsa with salmon. Cut up fresh, ripe mango, chop red onion, fresh cilantro (or fresh mint -- depending on your tastes), roasted red pepper, fresh red or yellow bell pepper, and a tiny bit of some hot pepper -- depends on how much heat you like. Definitely tossed salad would be good, but could you add a risotto? I love risotto, and it really accents almost anything, depending on what you add to it. Failing that, perhaps some couscous? It's quick and easy and really tasty. :)

Ahhhh - smoked salmon - so near and dear to my heart, here in the beautiful Pacific Northwest........... A good, crunchy, sourdough bread with roasted garlic and real butter, a nice, Northwest salad with mixed greens, dried cranberries, glazed walnuts and a raspberry vinaigrette, potatoes au gratin and a cool, pineapple or peach sorbet for dessert......... fabulous!

Friend of ours used to accompany smoked salmon with boiled potatoes (preferably new baby ones) and creamed spinach or creamed leeks. Simple. I now serve this during holidays because it's easy to feed a crowd. For spring, maybe swap out the creamed veggies for fresh asparagus with lemon butter. Roberta in D
