How long do your dill pickles need to rest before they can be eaten? I made a few jars last week as our local Costco in the UK has started carrying "snacking cucumbers" and they are just the right size for pickles :)

Well usually I let them sit for at least a month before eating them but you can eat them as soon as you feel you need to. They just wont be as pickled if you don't let them wait a month or so.
As with any pickles I have put down, it is personal preference as well. How dilly or how sour do you really like your dills or any pickles to be?
We used to put down the remainder cukes in just a large jar on the counter with the leftover brine and some garlic and dill and cover with a regular lid or lunch plate and eat them as we wanted. They had the dill flavour just not very strong.

Thanks KK, I just winged it for quantities so I'll see how they come out. I also added some mustard seed and a sliver of dried chilli to each jar as that is what my mum always put into her pickled onions.
