Semit OT: Quick cake for gatherings

We all seem to have quick cakes for gatherings. Someone at work made one of these and everyone clammered for the recipe. Here 'tis! Good served warm alone, or a la mode, or with a little whipped cream/Cool Whip.



PUMPKIN DUMP CAKE



MIX



1 CAN 30 oz OF PUMPKIN MIX
1 CAN 12oz or 16 oz OF EVAPORATED MILK
4 EGGS [MAY BE ABLE TO USE 3 IF YOU HAVE 16oz CAN OF MILK]
1 1/3 CUP SUGAR
1 tsp SALT
2 tsp CINNAMON
2 tsp PUMPKIN SPICE


POUR IN TO LARGE PAN [13"x9" CAKE PAN] SPRINKLE 1 BOX OF DRY YELLOW CAKE MIX 2 CUPS OF CHOPPED WALNUTS OR PEACANS MELT 1 =BD STICKS OF BUTTER AND POUR ON TOP



BAKE @ 350 FOR 50 MIN. Cool, enjoy ;)


You can use fake eggs, and butter substitute.

Do you use a can of pumpkin pie mix (the kind that's ready to bake without any added ingredients)? I think that's what the 30 ounce cans are. It seems to me that you wouldn't need the milk, eggs, sugar, & spices. Or just use a can of plain pumpkin and mix with other ingredients as you would for pie filling. I've seen a number of variations on the recipe and they specify EITHER a 15 ounce can of pumpkin pie filling OR a can of pumpkin + ingredients to make a pie filling.

I was trying to stay with the spirit of the season and not comment about the fat/cholesterol going on in that cake. It is tough to have 4 eggs and that much butter in anything bad. LOL I think sometimes I could get a business going giving lectures in the waiting room of the cardiologist. Taria

I bought pumpkin pie mix and will use that. Looking at what I posted earlier, it seems like that is a lot of milk and eggs, doesn't it? [visions of using more that one box of cake mix to get it to absorb, Lucille Ball-type oven fiasco running through my mind.....

Ginger in Ca running off to the store now to try and beat the rain, then back home to quilt some. Easier to do shopping on a weekend in old shoes than after work in the dark and rain!

Ah, c'mon. Leave out the egg YOLKS, add a couple more egg whites, substitute applesauce for the butter, and the only thing left to worry about is all that damn' sugar. ;-D (see sugar substitutes elsewhere) Applesauce makes for a more moist texture to the cake and compliments the pumpkin. But what the 'ell: I ain't making or eating it anyway. ;->

Saving that space for Lebkuchen (obsessed).

Meanwhile, back at the ranch, the wind is blowing like crazy! Sun is out, temps are pleasant (63F), but the wind is trying to knock me off the ladder. Christmas decorating can be a booger. Quilting's easier. ;-D
