Chritmas bonnet need help

I made caroler capes. Now I need to make the bonnets. I am using polar fleece. I have a small baby doll with a type of bonnet that I think would work . I can't figure out what size to cut the fabric. Here is what it is like. I hope I can describe it to you. It is a rectangle and on the edge of one long side is a casing and you run a ribbon through it and pull it tight and it forms almost a circle. Then the other casing is about 3" to 4" from the other side of the long edge and you run a ribbon through it. Then you place it on your head. You tie it under your chin. I hope that makes sense to you. Do you think that would work? Do you have an easier hat or bonnet to make for a Caroler out of polar fleece? Also, if I make this bonnet do you think I should use 2 layers with a stabilizer in the middle so the brim won't be so floppy more just wavy?

Easier than a rectangle with drawstring? Nope. (I have a UFO from the Simp caroler pattern....going on yikes since 2001!)

Make a trial bonnet with some sacrificial fleece. I bet you could turn a hem and stiffen it up sufficiently, if needed.
