The first thing I made in shop class in school was a lamp. I made mine quite complicated by building it up from walnut and maple but if one starts with a solid chunk of wood the process can be very simple. I would definitely stick to something turned between centers for at least the first few beginner's projects. Chucked projects can be far more entertaining but can be tricky and susceptible to coming apart from even minor catches.
