I like the books Wooly recommeded (I have all except the Knitter's Workshop). I also have Stitch n' Bitch, and The Big Book of Knitting. Sometimes I still look through "beginner" books at the store (Michael's had one for $5 the other day when I was there, but didn't get it) because they have tips that still help me and some projects are good.
This is where I re-taught myself to knit 2-3 years ago when I was in college (either I could afford books or yarn and needles). I hadn't knitted since I was in jr. high, and even then I wasn't good at it because grandma never quite had it right, either.
There are printed instructions (pictures) and videos. The videos helped me a lot.

If you need help learning to cast on, I recommend looking for a book written for children. I didn't learn how to cast on properly until my 5-year-old daughter wanted to learn how to knit.
